I found this recipe for an excellent tasty bulk-boosting lunch in a magazine a while back and thought I would share it with you.
4 hardboiled eggs, chopped
12oz can tuna
1 packet of baby spinach leaves
1/2 red pepper, diced
4 spring onions
A handful of alfalfa sprouts
2-3tbsp low fat myonnaise
Whoelgrain bread
Slice and dice everything, throw into a bowl, pour in mayo and eat
Excellent lunch
